Ingredients

  • 250 grams sourdough bread
  • 3 tablespoons extra-virgin olive oil
  • 250 grams cherry tomatoes
  • 1 large cucumber
  • 0.5 red onion
  • 150 grams feta cheese
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh dill
  • 3 tablespoons lemon juice
  • 1 tablespoons red wine vinegar
  • 1 teaspoon honey
  • 1 clove garlic
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Cut the sourdough bread into 2.5 cm (1-inch) cubes and spread them on a baking sheet. Drizzle with 1 tablespoon of olive oil and toss to coat evenly.

Toast the bread cubes in the oven for 8–10 minutes, or until golden and crisp. Remove and set aside to cool.

While the bread cools, halve the cherry tomatoes, peel and dice the cucumber into bite-sized chunks, and thinly slice the red onion. Chop the fresh parsley and dill.
