Ingredients

  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 large yellow onions
  • 1 teaspoon granulated sugar
  • 3 cloves garlic cloves
  • 1 cup dry white wine
  • 6 cups beef broth
  • 1 leaf bay leaf
  • 2 sprigs fresh thyme
  • 1 small loaf baguette
  • 2 cups Gruyère cheese (grated)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Peel and thinly slice the onions into half-moons. Mince the garlic cloves and set aside.

Step 2

In a large, heavy-bottomed pot, melt the unsalted butter over medium heat and add the olive oil.

Step 3

Add the sliced onions to the pot, stirring to coat them evenly with the butter and oil.

Step 4

Cook the onions on medium heat, stirring frequently, for about 15-20 minutes until they begin to soften and turn golden.

Step 5

Sprinkle the onions with granulated sugar and a pinch of salt to help with caramelization. Continue cooking for 20-25 minutes, stirring often, until the onions are a deep caramel color and richly fragrant.

Step 6

Add the minced garlic to the pot and cook for 1-2 minutes until fragrant.

Step 7

Deglaze the pot by pouring in the dry white wine, scraping up any browned bits from the bottom of the pot. Simmer for 3 minutes to reduce the wine slightly.

Step 8

Add the beef broth, bay leaf, and fresh thyme sprigs to the pot. Stir well and bring to a gentle simmer.

Step 9

Reduce the heat to low, cover, and let the soup cook for 30-40 minutes, allowing the flavors to meld.

Step 10

While the soup simmers, preheat your oven to 400°F (200°C). Slice the baguette into 1-inch-thick rounds and place them on a baking sheet.

Step 11

Toast the baguette slices for 5-7 minutes until crisp and lightly golden.

Step 12

Once the soup is done simmering, remove and discard the bay leaf and thyme sprigs. Taste the soup and adjust seasoning with salt and black pepper as needed.

Step 13

Ladle the soup into oven-safe bowls, leaving room at the top for the bread and cheese.

Step 14

Place 1-2 toasted baguette slices on top of each bowl of soup. Generously sprinkle grated Gruyère cheese over the bread, covering the surface completely.

Step 15

Place the bowls on a baking sheet (to catch any drips) and transfer to the oven. Broil on high for 2-4 minutes, or until the cheese is bubbling and golden brown.

Step 16

Carefully remove the bowls from the oven and allow them to cool slightly before serving. Enjoy your Rustic French Onion Soup!
