Ingredients

  • 500 grams all-purpose flour
  • 7 grams active dry yeast
  • 10 grams sugar
  • 10 grams salt
  • 300 ml warm water
  • 30 ml olive oil
  • 150 grams crumbled blue cheese
  • 10 grams chopped fresh rosemary
  • 5 grams cracked black pepper

Directions

Step 1

In a large mixing bowl, combine the flour, salt, and sugar. Stir until evenly mixed.

Step 2

In a small bowl, dissolve the yeast in 100 ml of the warm water. Let it sit for about 5-10 minutes until it becomes foamy.

Step 3

Add the yeast mixture and the remaining 200 ml of warm water to the flour mixture. Add the olive oil.

Step 4

Knead the mixture by hand or with a dough hook on a stand mixer for about 10 minutes until the dough is smooth and elastic.

Step 5

Gently fold in the crumbled blue cheese, chopped rosemary, and cracked black pepper until evenly distributed throughout the dough.

Step 6

Shape the dough into a ball and place it in a lightly oiled bowl. Cover it with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.

Step 7

Preheat your oven to 220°C (430°F) and line a baking sheet with parchment paper.

Step 8

Turn the dough out onto a floured surface and gently knock back the dough to remove any air bubbles. Shape it into a loaf or desired form.

Step 9

Place the shaped dough onto the prepared baking sheet and cover it with the damp cloth again. Let it rise for an additional 30 minutes.

Step 10

Once doubled in size again, score the top of the loaf with a sharp knife to allow for even expansion.

Step 11

Bake in the preheated oven for approximately 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

Step 12

Remove from the oven and let it cool on a wire rack before slicing. Serve warm or at room temperature.
