Ingredients

  • 12 oz egg noodles
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 lb beef sirloin, thinly sliced into strips
  • 1 large yellow onion, finely diced
  • 3 garlic cloves, minced
  • 8 oz white mushrooms, sliced
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 tbsp Dijon mustard
  • 2 tbsp all-purpose flour
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the egg noodles according to package instructions. Drain and set aside.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Step 3

Add the sliced beef in a single layer, season with a pinch of salt and pepper, and sear for 1-2 minutes on each side, until browned. Remove the beef from the skillet and set aside.

Step 4

In the same skillet, add the remaining olive oil and butter. Sauté the diced onion for 3-4 minutes, until softened.

Step 5

Stir in the minced garlic and sliced mushrooms, cooking for an additional 5-6 minutes until the mushrooms are tender and lightly browned.

Step 6

Sprinkle the flour over the vegetable mixture and stir well to coat. Cook for 1 minute to remove the raw flour taste.

Step 7

Gradually pour in the beef broth, stirring continuously to avoid lumps. Bring the mixture to a simmer and let it thicken slightly.

Step 8

Reduce the heat to low and stir in the sour cream, Dijon mustard, paprika, salt, and black pepper. Mix until the sauce is smooth and creamy.

Step 9

Return the seared beef to the skillet, along with any accumulated juices, and simmer for 2-3 minutes until heated through.

Step 10

Toss the cooked egg noodles into the skillet and mix well to coat them in the sauce.

Step 11

Garnish with fresh parsley and serve hot.
