Ingredients

  • 8 cups water
  • 4 cups chicken or vegetable stock
  • 3 medium potatoes
  • 1 medium carrot
  • 1 medium onion
  • 6 cups sorrel leaves
  • 4 large eggs
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup sour cream (for serving)

Directions

Step 1

In a large pot, combine water and chicken or vegetable stock. Bring to a boil over medium-high heat.

Step 2

Peel and dice the potatoes into bite-sized pieces. Add them to the pot and cook for 10-12 minutes, or until they begin to soften.

Step 3

Meanwhile, peel and grate the carrot, and finely chop the onion.

Step 4

In a skillet over medium heat, sauté the chopped onion and grated carrot in a small amount of oil until softened and lightly golden, about 5 minutes.

Step 5

Wash and roughly chop the sorrel leaves. Set them aside.

Step 6

Once the potatoes are tender, add the sautéed onion and carrot mixture to the pot. Stir well.

Step 7

Add the chopped sorrel leaves to the soup. Stir and let the soup simmer for 5-7 minutes. The sorrel will wilt and turn a darker green color.

Step 8

Season the soup with salt and black pepper. Adjust to taste.

Step 9

Hard-boil the eggs and peel them. Slice them into halves or quarters, and add to the soup just before serving.

Step 10

Finely chop the fresh dill and parsley, and stir them into the soup for a burst of flavor and freshness.

Step 11

Ladle the soup into bowls and serve warm with a dollop of sour cream on top. Enjoy your comforting Russian Green Borscht!
