Ingredients

  • 4 medium Russet potatoes
  • 1 medium Yellow onion
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh dill (optional)

Directions

Step 1

Peel the potatoes and slice them into thin, evenly sized strips or wedges about 1/8-inch thick to ensure even cooking.

Step 2

Peel and slice the onion into thin rings or half-rings, depending on preference.

Step 3

Rinse the potato slices under cold water to remove excess starch, then pat them dry thoroughly using a clean kitchen towel or paper towels.

Step 4

Heat the vegetable oil in a large frying pan or skillet over medium-high heat.

Step 5

Once the oil is shimmering, add the potato slices to the pan in a single layer. Avoid overcrowding the pan, as this will steam the potatoes instead of frying them. Work in batches if necessary.

Step 6

Cook the potatoes undisturbed for 4–5 minutes until the bottoms are golden and crispy.

Step 7

Flip the potatoes gently using a spatula and cook for another 4–5 minutes on the other side.

Step 8

Add the onions to the pan and stir to combine with the potatoes. Lower the heat to medium and continue to cook, stirring occasionally, for 10–12 minutes or until the onions are golden and the potatoes are tender but crispy on the outside.

Step 9

Season with salt and black pepper to taste, stirring to distribute the seasoning evenly.

Step 10

Optional: Garnish with freshly chopped dill for an herby finish before serving.

Step 11

Serve immediately as a side dish, or enjoy as a standalone meal with a dollop of sour cream on the side.
