Ingredients

  • 500 g carrots
  • 2 cloves garlic
  • 1 tsp ground coriander
  • 1 tsp ground paprika

  • 1 tsp sugar
  • 2 tbsp white vinegar
  • 3 tbsp vegetable oil
  • 1 small onion (optional, for infused oil)

Directions

Step 1

Peel and wash the carrots. Using a julienne peeler or the fine grater attachment of a food processor, shred the carrots into thin strips.

Place the shredded carrots into a large mixing bowl.

Peel and finely grate the garlic or press it through a garlic press. Add it to the carrots.
