Ingredients

  • 4 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2.25 teaspoons active dry yeast
  • 1.25 cups warm milk
  • 4 tablespoons unsalted butter (melted)
  • 1 egg
  • 1 teaspoon salt
  • 1 pound ground beef
  • 2 cups green cabbage (shredded)
  • 1 medium onion (finely diced)
  • 2 cloves garlic (minced)
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.75 teaspoon salt (for filling)
  • 1 egg (beaten, for egg wash)

Directions

Step 1

In a large mixing bowl, combine the flour, sugar, yeast, and salt.

Step 2

Gradually add the warm milk, melted butter, and one beaten egg. Mix until a dough forms.

Step 3

Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.

Step 4

Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.

Step 5

While the dough rises, prepare the filling. In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon.

Step 6

Add the diced onion and garlic to the skillet and cook for 3-4 minutes until softened.

Step 7

Stir in the shredded cabbage, black pepper, paprika, and salt. Cook for another 6-8 minutes until the cabbage is tender. Remove from heat and let the filling cool.

Step 8

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 9

Punch down the risen dough and divide it into 8 equal portions.

Step 10

Roll each portion into a circle approximately 6 inches in diameter.

Step 11

Place 2-3 tablespoons of filling onto the center of each dough circle. Fold the dough over the filling and pinch the edges tightly to seal. Place the sealed pies onto the prepared baking sheet.

Step 12

Brush each hand pie with the beaten egg to create a golden crust during baking.

Step 13

Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown.

Step 14

Remove the Runsas from the oven and let them cool slightly before serving.
