Ingredients

  • 1 cup All-purpose flour
  • 1.25 cups Milk
  • 2 Eggs
  • 2 tablespoons Unsalted butter (melted)
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 Fresh mangoes (peeled and sliced)
  • 3 tablespoons Dark rum
  • 2 tablespoons Brown sugar
  • 0.25 teaspoon Ground cinnamon
  • 0.25 cup Caramel sauce (optional, for drizzling)
  • 2 tablespoons Powdered sugar (optional, for dusting)

Directions

Step 1

In a large mixing bowl, combine all-purpose flour, milk, eggs, melted butter, granulated sugar, and vanilla extract. Whisk until the batter is smooth and free of lumps. Let the batter rest for 15 minutes.

Step 2

While the batter rests, prepare the mango filling. In a small bowl, combine sliced mangoes, dark rum, brown sugar, and ground cinnamon. Gently toss to coat the mango slices evenly. Let the mangoes marinate for at least 15 minutes.

Step 3

Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with butter or oil.

Step 4

Pour about 1/4 cup of the batter into the pan and quickly tilt and swirl the pan to evenly coat the surface with a thin layer of batter.

Step 5

Cook the crepe for 1-2 minutes, or until the edges start to lift and the bottom is lightly golden. Flip the crepe carefully and cook for another 20-30 seconds. Transfer the crepe to a plate and repeat with the remaining batter.

Step 6

Once all the crepes are cooked, assemble the dish. Place a few slices of rum-marinated mango in the center of each crepe, then fold or roll the crepe as desired.

Step 7

Drizzle the assembled crepes with caramel sauce and dust with powdered sugar, if using. Serve immediately and enjoy!
