  • 60 grams Chopped dried apricots
  • 60 grams Chopped pecans
  • 60 grams Chopped walnuts

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy using a hand mixer or stand mixer.

Step 3

Beat in the egg, vanilla extract, and dark rum until fully combined.

Step 4

In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves until evenly blended.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated and no dry streaks remain. Avoid overmixing.

Step 6

Fold in the chopped dried cherries, cranberries, apricots, pecans, and walnuts until evenly distributed throughout the cookie dough.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look slightly set.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheets for 3 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to a week or freeze for longer storage.
