Ingredients

  • 100 ml Rum
  • 200 ml Water
  • 2 g Sodium alginate
  • 5 g Calcium chloride
  • 200 ml Cold vegetable oil

Step 1

1. Place the vegetable oil in a tall glass or container and chill it in the freezer for at least 30 minutes. This will allow the rum mixture droplets to solidify when dropped into the oil.

2. In a medium-sized bowl, mix the water (150 ml) and sodium alginate using a hand blender until fully dissolved. Let the mixture rest for 10-15 minutes to allow any air bubbles to disperse.

3. In a separate bowl, mix the rum (100 ml) with the remaining 50 ml of water. Gradually add this mixture to the sodium alginate solution while stirring gently.
