Ingredients

  • 250 grams Rolled oats
  • 150 grams Unsalted butter
  • 120 grams Brown sugar
  • 4 tablespoons Golden syrup or light corn syrup
  • 2 tablespoons Dark rum
  • 1 medium orange Orange zest
  • 50 grams Dried cranberries or raisins
  • 50 grams Chopped almonds or pecans (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 20cm (8-inch) square baking tin with parchment paper.

Step 2

In a medium saucepan, melt the butter, brown sugar, and golden syrup over low heat, stirring until fully combined and smooth.

Step 3

Remove the saucepan from heat and stir in the dark rum and orange zest.

Step 4

In a large mixing bowl, combine the rolled oats, dried cranberries or raisins, and chopped nuts (if using).

Pour the butter and sugar mixture over the dry ingredients. Mix thoroughly until all the oats are evenly coated.
