Directions

Step 1

Start by segmenting the ruby red grapefruits. Cut off the top and bottom ends of each grapefruit, then carefully slice off the peel and white pith. Using a paring knife, cut along the membranes to release each segment. Place the segments in a mixing bowl and squeeze the remaining juice from the membranes into the bowl. Discard the membranes and peel.

Step 2

Dice the red bell pepper into small, even pieces and add it to the bowl with the grapefruit segments.
