Ingredients

  • 12 oz rotini pasta
  • 1 lb large raw shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tbsp lemon juice
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 0.25 tsp red pepper flakes (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 quart water

Directions

Step 1

Bring a large pot of salted water (4 quarts) to a boil over high heat.

Step 2

Add the rotini pasta and cook according to package instructions, typically 8-10 minutes, until al dente. Drain and set aside.

Step 3

While the pasta is cooking, heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium heat.
