  • 250 grams All-purpose flour
  • 2 large Eggs
  • 250 milliliters Coconut milk
  • 250 milliliters Water
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Salt
  • 1 tablespoon Vegetable oil
  • 2 tablespoons Additional vegetable oil

Directions

Step 1

In a large mixing bowl, sift the all-purpose flour and salt together.

In a separate bowl, lightly beat the eggs and then pour into the flour mixture.

Add coconut milk, water, turmeric powder, and 1 tablespoon of vegetable oil into the flour and egg mixture. Whisk all ingredients together thoroughly until a smooth batter forms. The batter should have a thin, pourable consistency, similar to heavy cream.

Strain the batter through a fine sieve into another bowl to remove any lumps. This ensures a smooth batter which will create fine, lacy pancakes.
