Ingredients

  • 250 g strawberries
  • 200 g raspberries
  • 250 ml cranberry juice
  • 100 ml orange juice
  • 2 tbsp honey
  • 125 ml water
  • 0.5 tsp lemon zest
  • 1 tsp vanilla extract
  • 6 leaves mint leaves (for garnish)
  • 2 tbsp fresh cream or Greek yogurt (optional, for garnish)

Directions

Step 1

Wash the strawberries and raspberries under cold water, then pat them dry with a clean towel. Hull the strawberries and cut them into halves if they are large.

Step 2

In a medium saucepan, combine the cranberry juice, water, honey, and lemon zest. Bring the mixture to a gentle simmer over medium heat and cook for 2-3 minutes, stirring occasionally until the honey is fully dissolved. Remove from heat and let it cool slightly.

Step 3

In a blender, add the strawberries, raspberries, orange juice, vanilla extract, and the cooled cranberry juice mixture. Blend on high speed until smooth, about 1-2 minutes.

Step 4

Strain the blended mixture through a fine-mesh sieve into a large bowl to remove any seeds and create a silky consistency. Use the back of a spoon to press the liquid through the sieve, discarding any solids left behind.

Step 5

Cover the bowl and refrigerate the soup for at least 2 hours to allow the flavors to meld and for the soup to chill completely.

Step 6

Before serving, taste the soup and adjust the sweetness with an additional teaspoon of honey if needed.

Step 7

Pour the chilled soup into bowls or shallow glasses. Garnish with fresh mint leaves and a dollop of fresh cream or Greek yogurt if desired.

Step 8

Serve immediately and enjoy the refreshing Rosy Berry Soup!
