Peel the potatoes and parboil them in a large pot of salted water for 10 minutes. They should be slightly softened but still firm enough to grate.
Drain the potatoes and allow them to cool completely. Once cooled, grate them using the large holes of a box grater.
In a large, nonstick skillet, heat 1 tablespoon of butter and the olive oil over medium heat.
Add the grated potatoes to the skillet and season them evenly with salt and black pepper. Toss gently to coat.
