Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 large Yellow onions
  • 1 teaspoon Sugar
  • 4 links Sausages (your choice, e.g., bratwurst or breakfast sausage)
  • 2 tablespoons Parsley (optional, for garnish)

Directions

Step 1

Wash the russet potatoes thoroughly and peel them. Using a box grater, shred the potatoes into coarse strands and place them in a large bowl of cold water to remove excess starch.

Step 2

Drain the shredded potatoes in a colander and squeeze out as much water as possible using a clean kitchen towel.

Step 3

In a large bowl, combine the shredded potatoes with 1 teaspoon of salt and 0.5 teaspoons of black pepper. Mix well.

Step 4

Heat a nonstick or cast-iron skillet over medium heat and melt 2 tablespoons of unsalted butter with 1 tablespoon of olive oil.

Step 5

Add half of the shredded potatoes to the skillet, spreading them evenly to form a flat disk about 1/2 inch thick. Cook for 6–8 minutes or until the bottom is golden and crispy.

Step 6

Flip the rösti carefully using a wide spatula or invert it onto a plate and slide it back into the skillet, then cook the other side for 6–8 minutes or until crispy and golden. Transfer to a plate and repeat with the remaining potatoes, adding more butter and oil if needed.

Step 7

Peel and slice the yellow onions into thin rings. Heat 1 tablespoon of olive oil in a separate skillet over medium heat. Add the onions and sprinkle with 1 teaspoon of sugar to help them caramelize.

Step 8

Cook the onions, stirring occasionally, for 15–20 minutes until they are soft, golden, and caramelized. Remove from heat and set aside.

Step 9

In the same pan or another skillet, cook the sausages according to the package instructions over medium heat until browned and cooked through (internal temperature should reach 160°F or 71°C).

Step 10

To serve, place a portion of rösti on each plate, top with sausages and a generous portion of caramelized onions. Garnish with chopped parsley, if desired.
