Ingredients

  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 tablespoon fresh rosemary
  • 2 eggs
  • 0.25 cup olive oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon water
  • 0.25 cup pine nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Finely chop the fresh rosemary and mix it into the dry ingredients. If using, add the pine nuts as well.

Step 4

In a medium bowl, whisk together the eggs, olive oil, vanilla extract, and water until well combined.

Step 5

Gradually pour the wet ingredients into the dry ingredients, stirring with a wooden spoon or spatula. Mix until a dough forms.

Step 6

Lightly flour a clean surface and transfer the dough onto it. Gently knead it a few times until smooth.

Step 7

Shape the dough into a log approximately 12 inches long and 3 inches wide and place it on the prepared baking sheet.

Step 8

Bake the log for 25 minutes, or until the surface is firm and just starting to turn golden. Remove it from the oven and let it cool for 10 minutes.

Step 9

Using a serrated knife, slice the log into ½-inch thick biscotti pieces. Lay the slices flat on the baking sheet.

Step 10

Return the slices to the oven and bake for 10 minutes, then flip them over and bake for an additional 10 minutes, or until crisp and golden.

Step 11

Allow the biscotti to cool completely on a wire rack before serving or storing.
