Ingredients

  • 1.5 pounds Ground beef
  • 0.5 pounds Ground pork
  • 1 large Apple
  • 1 medium Yellow onion
  • 2 cloves Garlic cloves
  • 1 tablespoon Fresh rosemary
  • 0.75 cups Panko breadcrumbs
  • 0.5 cups Milk
  • 1 large Egg
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups Ketchup
  • 2 tablespoons Brown sugar
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it.

Step 2

Peel and grate the apple using a box grater. Set aside.

Step 3

Finely dice the onion and mince the garlic cloves. Chop the fresh rosemary leaves finely.

Step 4

In a small bowl, combine the panko breadcrumbs and milk. Allow the mixture to sit for 2-3 minutes to soften.

Step 5

In a large mixing bowl, combine the ground beef, ground pork, grated apple, diced onion, minced garlic, chopped rosemary, soaked breadcrumbs, egg, Worcestershire sauce, Dijon mustard, salt, and black pepper. Mix gently with your hands until just combined. Avoid overmixing to keep the meatloaf tender.

Step 6

Shape the meat mixture into a loaf shape on the prepared baking sheet or press it into a loaf pan.

Step 7

In a small bowl, mix together the ketchup, brown sugar, and apple cider vinegar to create the glaze.

Step 8

Spread half of the glaze evenly over the top of the meatloaf.

Step 9

Place the meatloaf in the preheated oven and bake for 40 minutes.

Step 10

Remove the meatloaf from the oven and spread the remaining glaze over the top. Return it to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 11

Let the meatloaf rest for 10 minutes before slicing and serving. Enjoy!
