Ingredients

  • 1 pound ground beef
  • 0.5 pound ground pork
  • 1 cup carrots
  • 0.5 cup onion
  • 0.75 cup breadcrumbs
  • 0.25 cup milk
  • 1 large egg
  • 1 tablespoon fresh rosemary
  • 2 cloves garlic
  • 1 tablespoon Worcestershire sauce
  • 0.5 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Peel and shred the carrots using a box grater or food processor until you have about 1 cup. Finely dice the onion and mince the garlic cloves.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, shredded carrots, diced onion, breadcrumbs, milk, egg, minced garlic, chopped fresh rosemary, Worcestershire sauce, dried thyme, salt, and black pepper. Mix gently with your hands until just combined, being careful not to overmix.

Step 4

Transfer the meat mixture to a loaf pan or shape it into a loaf on a parchment-lined baking sheet.

Step 5

In a small bowl, whisk together the ketchup and brown sugar to make the glaze. Spread the glaze evenly over the top of the meatloaf.

Step 6

Bake in the preheated oven for 55-60 minutes, or until the internal temperature reaches 160°F (71°C) as measured with a meat thermometer.

Step 7

Allow the meatloaf to rest for 10 minutes before slicing and serving. This allows the juices to redistribute for a moist and flavorful result.

Step 8

Garnish with additional fresh rosemary, if desired. Serve warm with your favorite sides like mashed potatoes, green beans, or a fresh salad.
