Ingredients

  • 300 g carrots
  • 300 g parsnips
  • 50 g unsalted butter
  • 150 ml heavy cream
  • 2 tbsp honey
  • 0.5 tsp ground cinnamon
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp fresh thyme leaves

Directions

Step 1

Preheat your oven to 200°C (390°F).

Peel and chop the carrots and parsnips into even-sized pieces for uniform cooking.

Place the chopped root vegetables on a baking tray. Drizzle with 1 tablespoon of olive oil, and sprinkle lightly with half the salt and black pepper.
