  • 1 large Sweet potato

  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel the Russet potatoes, carrots, parsnips, and sweet potato. Chop them into evenly-sized chunks, approximately 1-inch pieces, to ensure even cooking.

Peel the garlic cloves and leave them whole.

Fill a large pot with water and add a pinch of salt. Place the prepared root vegetables and garlic cloves in the pot and bring it to a boil over medium-high heat.

Reduce the heat to medium and cook the vegetables for 20-25 minutes, or until they are fork-tender.
