Ingredients

  • 4 cups Whole milk
  • 1 cup Granulated sugar
  • 1 Cinnamon stick
  • 1 teaspoon Vanilla extract
  • 6 Egg yolks
  • 0.25 teaspoons Ground nutmeg
  • 0.5 cups Rum or brandy (optional)

Directions

Step 1

In a medium saucepan, combine the whole milk, cinnamon stick, and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the milk is infused with the cinnamon aroma, about 8-10 minutes.

Step 2

Remove the saucepan from heat. Discard the cinnamon stick and stir in the vanilla extract.

Step 3

In a mixing bowl, whisk the egg yolks until slightly thickened. Slowly add 1 cup of the warm spiced milk into the egg yolks, whisking constantly to temper the eggs and prevent curdling.

Step 4

Slowly pour the tempered egg mixture back into the saucepan with the remaining milk, whisking constantly to combine.

Step 5

Return the saucepan to low heat. Cook the mixture, stirring frequently with a wooden spoon, until it thickens slightly and coats the back of the spoon, about 10-12 minutes. Be careful not to let the mixture boil.

Step 6

Once thickened, remove the saucepan from the heat and stir in the ground nutmeg and optional rum or brandy.

Step 7

Allow the Rompope to cool slightly, then transfer it to a glass bottle or container. Refrigerate for at least 2 hours or until thoroughly chilled.

Step 8

Before serving, shake or stir the Rompope well. Pour into glasses, and garnish with a sprinkle of nutmeg, if desired. Enjoy!
