  • 250 ml White wine vinegar

  • 2 leaves Bay leaves

Directions

Step 1

Rinse the salted herring fillets under cold water to remove the excess salt, then pat them dry with paper towels.

Slice the pickled gherkins lengthwise into quarters.

Lay each herring fillet flat, skin-side down, and place a quartered gherkin, a pickled pearl onion, and a small sprig of dill on the wider end of the fillet.
