Ingredients

  • 2 cups rolled oats
  • 1.5 cups shredded coconut
  • 1 14-ounce can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 0.25 teaspoons salt
  • 2 large egg whites
  • 0.5 cups semi-sweet chocolate chips (optional)

Directions

Step 1

Preheat your oven to 325°F (160°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, shredded coconut, and salt. Stir until evenly distributed.

Step 3

In a separate bowl, whisk the egg whites until frothy. Add the sweetened condensed milk and vanilla extract, and mix until well combined.

Step 4

Pour the wet mixture into the dry ingredients and stir until everything is evenly coated.

Step 5

If using chocolate chips, fold them gently into the mixture.

Step 6

Using a tablespoon or a cookie scoop, drop mounds of the mixture onto the prepared baking sheets, spacing them about 1 inch apart.

Step 7

Bake in the preheated oven for 18–20 minutes, or until the edges of the macaroons are golden brown.

Step 8

Remove the baking sheets from the oven and allow the macaroons to cool on the sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Once cooled, store the macaroons in an airtight container at room temperature for up to 5 days.
