Ingredients

  • 2 pounds Pork loin
  • 4 Garlic cloves, minced
  • 2 tablespoons Fresh rosemary, finely chopped
  • 2 tablespoons Fresh thyme, finely chopped
  • 3 tablespoons Dijon mustard
  • 1.5 tablespoons Honey
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 1 teaspoon Freshly ground black pepper
  • 0.5 cup Breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 1 roll Butcher's twine

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Butterfly the pork loin by slicing it lengthwise, stopping short of cutting all the way through. Open the pork loin up like a book and flatten it with a meat mallet to about 3/4-inch thickness.

Step 3

In a small bowl, mix together the minced garlic, chopped rosemary, thyme, Dijon mustard, honey, olive oil, salt, and black pepper to create a marinade.

Step 4

Spread the marinade evenly across the surface of the flattened pork loin.

Step 5

In another bowl, combine the breadcrumbs and grated Parmesan cheese. Evenly sprinkle this mixture over the marinade-coated pork loin.

Step 6

Starting from one short end, tightly roll the pork loin into a log shape. Secure the roll tightly with butcher's twine, wrapping it every 2 inches to maintain its shape during cooking.

Step 7

Heat a large oven-safe skillet over medium-high heat and sear the pork roll on all sides for 2-3 minutes, until golden brown.

Step 8

Transfer the skillet to the preheated oven and roast the pork roll for 60-70 minutes, or until an internal temperature of 145°F (63°C) is reached.

Step 9

Once cooked, remove the pork roll from the oven and let it rest for 10 minutes to allow the juices to redistribute.

Step 10

Slice the pork roll into 1-inch-thick rounds and serve with your choice of sides, such as roasted vegetables or mashed potatoes.
