Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Salt
  • 0.75 cups Water
  • 3 tablespoons Olive oil
  • 1 cup Mozzarella cheese (shredded)
  • 0.25 cup Fresh parsley (chopped)
  • 0.25 cup Green onions (thinly sliced)
  • 2 cloves Garlic (minced)
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red chili flakes (optional)
  • 2 tablespoons Butter (melted)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt.

Step 2

Gradually add water and 2 tablespoons of olive oil to the flour mixture, stirring until a dough begins to form.

Step 3

Knead the dough on a lightly floured surface for 5–7 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for 15 minutes.

Step 4

While the dough is resting, prepare the filling by mixing shredded mozzarella cheese, chopped parsley, sliced green onions, minced garlic, black pepper, and chili flakes in a bowl.

Step 5

Divide the dough into 4 equal portions and roll each portion into a thin oval or rectangular sheet about 10 inches long and 6 inches wide.

Step 6

Spread the prepared filling evenly over each rolled-out piece of dough, leaving a small margin around the edges.

Step 7

Starting from the longer edge, tightly roll the dough into a log. Pinch the ends to seal them, ensuring none of the filling spills out.

Step 8

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Place one rolled log in the skillet and cook for 2 minutes on each side, or until golden brown.

Step 9

Remove the cooked Rolachi from the skillet and brush it with melted butter. Repeat with the remaining logs.

Step 10

Slice the Rolachi into bite-sized pieces and serve warm. Enjoy with your favorite dipping sauce or a side of salad.
