Ingredients

  • 2 pieces boneless, skinless chicken breast
  • 2 packs ramen noodles (instant, without seasoning packets)
  • 3 cups fresh spinach leaves
  • 4 cups chicken broth
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 pieces garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 piece carrot, julienned
  • 3 stalks scallions, sliced
  • 2 pieces hard-boiled eggs, halved
  • 1 teaspoon sesame seeds (optional, for garnish)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat the sesame oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until cooked through. Remove from the pan and let rest, then slice into thin strips.

Step 3

In a large pot, combine the chicken broth, minced garlic, and grated ginger. Bring to a boil over medium-high heat.

Step 4

Once boiling, reduce the heat to medium and add the soy sauce, julienned carrot, and ramen noodles. Cook the noodles according to the package instructions (approximately 3-4 minutes).

Step 5

Add the fresh spinach leaves to the pot and stir gently until wilted, about 1-2 minutes.

Step 6

Divide the ramen and broth evenly between two bowls. Top each bowl with sliced chicken, halved hard-boiled eggs, and a sprinkle of sliced scallions.

Step 7

Garnish with sesame seeds, if desired. Serve hot and enjoy your Rockin Spinach Chicken Ramen!
