Ingredients

  • 1 cup White rice (long-grain or medium-grain)
  • 2 cups Water
  • 3 cups Whole milk
  • 0.5 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 1 tablespoon Unsalted butter
  • 0.33 cup Raisins (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium-sized saucepan, bring 2 cups of water to a boil. Add the rice and reduce the heat to low. Cover and simmer for about 15 minutes, or until the rice is mostly cooked and the water is absorbed.

Step 3

In a separate saucepan over medium heat, combine the milk, sugar, and salt. Stir occasionally and heat until the mixture is warm but not boiling.

Step 4

Slowly pour the warm milk mixture into the cooked rice, stirring to combine. Reduce the heat to low and cook for about 20 minutes, stirring frequently to prevent sticking. The mixture should thicken as the rice absorbs the milk.

Step 5

Stir in the vanilla extract, ground cinnamon, ground nutmeg, and unsalted butter. Taste and adjust seasoning as desired.

Step 6

If using raisins, stir them in and cook for an additional 5 minutes.

Step 7

Remove from heat and let the pudding cool for a few minutes. It will thicken further as it cools.

Step 8

Serve warm or chilled, garnished with an extra sprinkle of cinnamon or a dollop of whipped cream if desired.
