  • 1 cup Coconut milk (unsweetened)
  • 2 tablespoons Honey
  • 1 cup Blueberries (fresh or frozen)
  • 2 tablespoons Water

Directions

Step 1: Prepare the red layer by blending strawberries, 1 tablespoon of sugar, and lemon juice in a blender until smooth. Strain through a fine mesh sieve to remove seeds, if desired. Pour the mixture evenly into popsicle molds, filling each mold about a third of the way. Freeze for 45 minutes or until partially set.

Step 2: Prepare the white layer by whisking coconut milk and honey until fully combined. Once the red layer is partially frozen, carefully pour the coconut milk over the red layer, adding another one-third height to the molds. Freeze again for 45 minutes or until partially set.

Step 3: Prepare the blue layer by blending blueberries, 1 tablespoon of sugar, and water in a blender until smooth. Strain through a fine mesh sieve if desired. Pour the blueberry mixture over the white layer, filling the molds to the top.
