Ingredients

  • 3 lbs Beef roast (ribeye or top sirloin)
  • 4 lbs Coarse rock salt
  • 4 large Egg whites
  • 0.5 cups Water
  • 3 sprigs Fresh rosemary sprigs
  • 4 cloves Garlic cloves, minced
  • 1 teaspoon Black pepper, freshly ground
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse and pat the beef roast dry with paper towels. Rub olive oil, minced garlic, and freshly ground black pepper all over the roast. Let it rest at room temperature for 15 minutes.

Step 3

In a large mixing bowl, combine the rock salt, egg whites, and water. Mix thoroughly until it forms a damp, sand-like consistency.

Step 4

Spread a 1-inch-thick layer of the salt mixture on the bottom of a roasting pan, just large enough to hold the beef roast.

Step 5

Lay the rosemary sprigs on top of the salt bed, spaced evenly to add flavor to the meat.

Step 6

Place the seasoned beef roast on top of the rosemary layer.

Step 7

Using your hands, pack the remaining salt mixture over the entire roast, completely encasing it. Make sure there are no gaps or holes.

Step 8

Place the roasting pan in the preheated oven and cook for 90 minutes for medium-rare or adjust the time for your preferred doneness (use a meat thermometer if necessary).

Step 9

Once cooked, remove the roast from the oven and let it rest for 10 minutes. The salt crust will harden.

Step 10

Carefully crack and remove the salt crust using a wooden mallet or a large knife. Brush off any excess salt from the meat with a pastry brush.

Step 11

Slice the roast into desired portions and serve with your favorite sides. Enjoy the tender, juicy meat with a subtle rosemary and garlic infusion!
