Ingredients

  • 1 head Romaine lettuce
  • 2 cups Arugula
  • 1.5 cups Cherry tomatoes
  • 1 Cucumber
  • 0.5 Red onion
  • 0.75 cup Kalamata olives
  • 1 cup Mozzarella balls (ciliegine)
  • 0.5 cup Shaved Parmesan cheese
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic
  • 0.5 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and thoroughly dry the romaine lettuce and arugula. Tear the romaine leaves into bite-sized pieces and place them in a large salad bowl along with the arugula.

Slice the cherry tomatoes in half and add them to the bowl.

Peel the cucumber if desired, then slice it into thin rounds. Add to the salad.
