  • 6 leaves, torn for garnish Fresh basil leaves

Directions

Step 1

Preheat the oven to 425°F (220°C).

Place the diced red and yellow bell peppers, sliced zucchini, red onion, and cherry tomatoes onto a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with half of the salt and black pepper. Toss to coat evenly.
