Ingredients

  • 250 grams Fresh strawberries
  • 1 tablespoon Granulated sugar (for strawberries)
  • 3 large Egg whites
  • 200 grams Granulated sugar (for meringues)
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Lemon juice
  • 1 teaspoon Cornstarch

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

Step 2

Hull and halve the strawberries, then spread them out on the prepared baking sheet.

Step 3

Sprinkle 1 tablespoon of granulated sugar over the strawberries and roast them in the oven for 20 minutes, or until softened and slightly caramelized. Allow them to cool, then mash them lightly with a fork to form a chunky puree. Set aside.

Step 4

Reduce the oven temperature to 100°C (212°F) and line another baking sheet with fresh parchment paper.

Step 5

In a clean, dry bowl, begin whipping the egg whites using an electric mixer on medium speed. Once they become foamy, add the lemon juice to stabilize the meringue.

Gradually add the 200 grams of granulated sugar, one tablespoon at a time, while continuing to whip the egg whites. Increase the mixer speed to high and whip until stiff, glossy peaks form.

Gently fold in the vanilla extract and cornstarch using a spatula.

Using two large spoons, scoop dollops of the meringue mixture onto the prepared baking sheet, spacing them about 2 inches apart. Use the back of a spoon to create a slight indentation in the center of each meringue.

Add a small spoonful of the roasted strawberry puree to the center of each meringue and gently swirl it into the meringue using a toothpick or skewer.

Bake the meringues in the oven for 1.5 hours, or until they are completely dry to the touch and can be easily lifted off the parchment paper. Turn off the oven and let the meringues cool completely inside with the door slightly ajar.
