Ingredients

  • 900 grams Baby potatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Dried rosemary
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper or lightly grease it with oil.

Step 2

Place the baby potatoes in a large pot and fill with enough water to cover them. Add 1 teaspoon of salt to the water and bring to a boil over high heat.

Step 3

Reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until they are fork-tender. Drain the potatoes and let them cool slightly.

Step 4

Transfer the cooked potatoes to the prepared baking sheet. Using the bottom of a glass or a potato masher, gently press each potato until flattened but still intact.

Step 5

Drizzle the olive oil evenly over the smashed potatoes. Sprinkle with garlic powder, paprika, dried rosemary, the remaining 0.5 teaspoon of salt, and black pepper.

Step 6

Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the edges of the potatoes are golden brown and crispy.

Step 7

Remove the potatoes from the oven and transfer them to a serving platter. Garnish with freshly chopped parsley for a pop of color and extra flavor.

Step 8

Serve warm as a delicious side dish or snack. Enjoy!
