Ingredients

  • 2 pounds Whole red snapper, cleaned and gutted
  • 3 tablespoons Olive oil
  • 4 cloves Fresh garlic, minced
  • 2 teaspoons Fresh rosemary, chopped
  • 2 teaspoons Fresh thyme, chopped
  • 1 whole Lemon, sliced
  • 1.5 teaspoons Kosher salt
  • 1 teaspoon Black pepper, freshly ground
  • 0.5 teaspoon Red chili flakes (optional)
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Rinse the red snapper under cold water and pat it dry with paper towels. Make 3 diagonal slits on each side of the fish with a sharp knife, being careful not to cut too deep. This helps the seasonings penetrate the fish.

Step 3

Rub the entire fish, inside and outside, with olive oil. Sprinkle the kosher salt, black pepper, and red chili flakes (if using) evenly over the fish.
