Ingredients

  • 2 red bell peppers
  • 1 cup Greek yogurt
  • 4 ounces cream cheese, softened
  • 1 garlic clove
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil leaves, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 450°F (230°C).

Step 2

Place the red bell peppers on a baking sheet and roast in the oven for 12-15 minutes, turning occasionally, until the skin is charred and blistered.

Step 3

Remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let the peppers steam for 5-10 minutes to loosen the skin.

Step 4

Peel the skin off the peppers, remove the stems and seeds, and pat the peppers dry with a paper towel.

Step 5

In a food processor, combine the roasted red peppers, Greek yogurt, cream cheese, garlic clove, parsley, basil, lemon juice, olive oil, salt, and black pepper.

Step 6

Blend the mixture until smooth and creamy. Scrape down the sides of the food processor as needed to ensure everything is evenly mixed.

Step 7

Taste the dip and adjust seasoning if necessary. Add more salt, pepper, or lemon juice as desired.

Step 8

Transfer the dip to a serving bowl and garnish with a drizzle of olive oil or a sprinkle of fresh herbs, if desired.

Step 9

Serve immediately with your choice of vegetables, crackers, or bread, or refrigerate until ready to serve.
