Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 2 large roasted red peppers
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 0.25 cup fresh parsley
  • 0.25 cup fresh basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup feta cheese (optional)

Directions

Step 1

Place the roasted red peppers on a cutting board. Dice them into small, bite-sized pieces and set aside.

Step 2

Mince the garlic cloves and finely chop the parsley and basil. Set these aside as well.

Step 3

In a medium saucepan, bring 1.25 cups of water to a boil. Once boiling, add a pinch of salt and 1 tablespoon of olive oil.

Remove the saucepan from heat and stir in the couscous. Cover with a lid and let it sit for 5 minutes or until the couscous has absorbed all the liquid.
