Ingredients

  • 3 large Red bell peppers
  • 2 whole Garlic cloves
  • 2 tablespoons Olive oil
  • 2 tablespoons Tahini
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh parsley

Directions

Step 1

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

Cut the red bell peppers in half lengthwise, remove the seeds and stems, and place them cut-side down on the baking sheet.

Add the unpeeled garlic cloves to the baking sheet alongside the bell peppers.

Roast in the preheated oven for 20-25 minutes, or until the peppers are tender and the skins are lightly charred.

Remove the tray from the oven and let the peppers cool for 10 minutes, then peel off and discard the charred skins.
