Ingredients

  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 2 tablespoons Black peppercorns
  • 4 tablespoons Coarse sea salt
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse the red and yellow bell peppers, dry them, and lightly coat them with olive oil.

Step 3

Place the peppers on a baking sheet lined with parchment paper and roast them in the preheated oven for 25-30 minutes, turning them halfway through, until the skin is blistered and slightly charred.

Step 4

Remove the peppers from the oven and place them into a bowl. Cover the bowl tightly with plastic wrap and let the peppers steam for 10 minutes. This will make peeling the skin easier.

Step 5

Once cooled, peel the charred skin off the peppers, remove the seeds and stems, and pat the flesh dry with paper towels to remove excess moisture.

Step 6

Cut the roasted pepper flesh into small pieces and spread them evenly on a clean, parchment-lined baking sheet.

Step 7

Reduce the oven temperature to 200°F (95°C) and return the peppers to the oven to dry out for 1.5-2 hours, flipping occasionally. The goal is to completely dehydrate the peppers until they become brittle.

Step 8

Once dried, transfer the pepper pieces to a spice grinder or a food processor along with the black peppercorns and coarse sea salt.

Step 9

Pulse the mixture until it reaches your desired texture, whether coarse or fine.

Step 10

Transfer the roasted pepper salt blend into an airtight jar or container. Store in a cool, dry place for up to 3 months.

Step 11

Use this versatile seasoning to enhance grilled meats, roasted vegetables, popcorn, or any savory dish of your choice.
