Ingredients

  • 2 pounds sweet potatoes
  • 1 garlic bulb
  • 2 teaspoons olive oil
  • 3 tablespoons unsalted butter
  • 0.25 cup milk (or heavy cream)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon fresh parsley (optional, chopped)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel the sweet potatoes and cut them into 1-inch cubes for even cooking.

Step 3

Place the sweet potato cubes in a large pot of salted water. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.

Step 4

While the sweet potatoes are boiling, prepare the roasted garlic. Slice the top off the garlic bulb to expose the cloves slightly.

Step 5

Drizzle the exposed garlic cloves with 2 teaspoons of olive oil and wrap the bulb in aluminum foil.

Step 6

Place the garlic bulb in the oven and roast for 30-35 minutes, or until the garlic is soft and golden.

Step 7

Drain the cooked sweet potatoes and return them to the pot. Let them sit for 1-2 minutes to allow excess water to evaporate.

Step 8

Squeeze the roasted garlic cloves out of their skins into the pot with the sweet potatoes.

Step 9

Add the unsalted butter, milk (or heavy cream), salt, and black pepper to the pot.

Step 10

Mash the sweet potatoes and roasted garlic together using a potato masher or a handheld mixer until smooth and creamy. Adjust seasoning to taste.

Step 11

Transfer the sweet potato mash to a serving bowl and garnish with chopped fresh parsley if desired.

Step 12

Serve warm as a side dish and enjoy!
