Ingredients

  • 1 whole Garlic bulb
  • 2 teaspoons Olive oil
  • 1 large Egg yolk
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoons Salt
  • 1 cup Vegetable oil
  • 0.25 teaspoons Freshly ground black pepper
  • 1 teaspoon Water (optional)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Cut the top off the garlic bulb to expose the cloves slightly. Drizzle 2 teaspoons of olive oil over the exposed cloves and wrap the bulb tightly in aluminum foil.

Step 3

Roast the garlic in the oven for 35-40 minutes, or until the cloves are soft and golden. Remove from the oven and let it cool.

Once the garlic has cooled, squeeze the roasted cloves out of their skins into a bowl and mash them into a smooth paste using a fork.
