Ingredients

  • 1 bulb whole garlic bulb
  • 2 tablespoons olive oil
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon white wine vinegar
  • 1 teaspoon honey
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon water

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the top off the garlic bulb to expose the cloves. Remove any loose outer layers of the garlic skin.

Step 3

Drizzle 1 tablespoon of olive oil over the exposed garlic cloves, wrap the bulb tightly in aluminum foil, and place it on a baking sheet.

Step 4

Roast the garlic in the preheated oven for 35-40 minutes, or until the cloves are soft and golden brown. Allow it to cool slightly.

Step 5

Squeeze the roasted garlic cloves out of their skins into a small mixing bowl.

Step 6

Mash the roasted garlic cloves into a smooth paste using the back of a spoon or fork.

Step 7

In a separate medium bowl, whisk together the mashed roasted garlic, mayonnaise, Dijon mustard, lemon juice, white wine vinegar, honey, salt, and black pepper.

Step 8

Slowly whisk in the remaining 1 tablespoon of olive oil until the dressing becomes smooth and well combined.

Step 9

Add water to the dressing, 1/2 tablespoon at a time, until your desired consistency is reached.

Step 10

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 11

Store the dressing in an airtight container in the refrigerator for up to one week.
