Ingredients

  • 1 whole garlic bulb
  • 1 cup raw almonds
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 4 tablespoons water
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon smoked paprika (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Slice off the top of the garlic bulb, exposing the tops of the cloves. Drizzle with 1 tablespoon of olive oil, wrap it in aluminum foil, and roast in the oven for 35-40 minutes or until the cloves are soft and golden.

While the garlic roasts, place the raw almonds in a bowl and cover them with hot water. Let them soak for 15-20 minutes to soften. Drain and set aside.

Once the garlic has cooled slightly, squeeze the roasted cloves out of their skins and into a blender or food processor.
