  • 1 3-4 lbs whole chicken
  • 2 tablespoons olive oil
  • 1 teaspoons salt
  • 1 teaspoons black pepper
  • 1 teaspoons garlic powder
  • 1 teaspoons paprika
  • 1 teaspoons dried thyme
  • 1 whole lemon
  • 2 sprigs fresh rosemary
  • 4 whole garlic cloves

Directions

Step 1

Preheat your oven to 425°F (220°C).

Remove the chicken from its packaging and pat it dry with paper towels. Ensure the chicken cavity is empty.

Step 3

Rub the chicken all over with olive oil to coat it evenly.

Step 4

In a small bowl, mix the salt, black pepper, garlic powder, paprika, and dried thyme.

Sprinkle the spice mixture evenly over the chicken, including inside the cavity, and rub it into the skin.

Cut the lemon in half and place both halves inside the chicken cavity along with two rosemary sprigs and the garlic cloves.
