Ingredients

  • 4 medium carrots
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 1 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 2 small garlic cloves
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1 tablespoon parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and slice the carrots into 1/2-inch thick rounds.

Step 3

On a baking sheet, toss the carrot slices with 1 tablespoon of olive oil, ground cumin, paprika, salt, and pepper. Spread them out evenly in a single layer.

Step 4

Roast the carrots in the oven for 20-25 minutes, turning them halfway through cooking, until they are tender and lightly caramelized.

Step 5

While the carrots are roasting, peel and mince the garlic.

Step 6

Once the carrots are ready, let them cool slightly for about 5 minutes.

Step 7

In a food processor or blender, combine the roasted carrots, garlic, tahini, lemon juice, and the remaining 1 tablespoon of olive oil. Blend until smooth, scraping down the sides as needed.

Step 8

If the mixture is too thick, add water 1 tablespoon at a time and blend until you reach your desired consistency.

Step 9

Taste and adjust seasoning, adding more salt or lemon juice to your liking.

Step 10

Transfer the dip to a serving bowl and garnish with chopped parsley, if using.

Step 11

Serve with crackers, pita bread, or fresh-cut vegetables. Enjoy!
