Ingredients

  • 4 pieces cod fillets
  • 6 leaves fresh bay leaves
  • 3 tablespoons extra virgin olive oil
  • 1 whole lemon
  • 2 cloves garlic cloves
  • 1 teaspoon sea salt
  • 0.5 teaspoons black pepper
  • 1 cup cherry tomatoes
  • 2 tablespoons parsley, finely chopped

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides of the fillets with sea salt and black pepper.

Peel and thinly slice the garlic cloves. Cut the lemon into wedges.
