Ingredients

  • 2 lbs Pork loin (boneless)
  • 4 tbsp Olive oil
  • 4 cloves Garlic cloves (minced)
  • 2 tbsp Fresh rosemary (chopped)
  • 1 tbsp Fresh thyme (chopped)
  • 2 tsp Salt
  • 1 tsp Black pepper (freshly ground)
  • 0.5 cup Dry white wine
  • 0.5 cup Chicken stock
  • 12 oz Uncooked pasta (spaghetti or linguine)
  • 3 tbsp Butter
  • 0.5 cup Parmesan cheese (grated)
  • 2 tbsp Fresh parsley (chopped)
  • 1 tsp Lemon zest
  • 4 quarts Water (for pasta)
  • 1 tbsp Salt (for pasta water)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork loin dry with paper towels and rub it all over with 2 tablespoons of olive oil, minced garlic, rosemary, thyme, salt, and black pepper.

Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of olive oil and sear the pork loin on all sides until golden brown, about 2-3 minutes per side.

Transfer the skillet to the preheated oven and roast the pork loin for 25-35 minutes, or until the internal temperature reaches 145°F (63°C).

While the pork is roasting, bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of salt and the pasta, cooking until al dente according to package instructions. Reserve 1 cup of pasta water, then drain the pasta.
