Ingredients

  • 1 3-4 lbs whole chicken
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 lemon
  • 4 garlic cloves
  • 1 apple
  • 1 pear
  • 8 fresh sage leaves
  • 1 red onion
  • 1 cinnamon stick
  • 1 tablespoon honey
  • 1 cup chicken broth

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken dry with paper towels and place it on a roasting pan.

Step 3

Rub the chicken with olive oil, then season it evenly with salt, black pepper, thyme, and rosemary.

Cut the lemon in half. Stuff one half inside the chicken cavity along with 2 smashed garlic cloves and 3 sage leaves.

Slice the apple, pear, and red onion into wedges. Arrange them around the chicken in the roasting pan along with the remaining garlic cloves and sage leaves.

Break the cinnamon stick in half and add it to the pan.
